Potatoes are one of the best vegetables to roast as they get so crispy and flavorful. This country style potato recipe is a great side dish recipe anytime! This side dish recipe is good dipped in a side of ketchup. The ingredients you will need for this potato recipe include red potatoes with the skins left on scrubbed and diced, olive oil, grated Parmesan cheese, paprika, garlic powder, salt, and pepper.
To start preheat the oven to 425 degrees Fahrenheit. Then line a baking pan with parchment paper or aluminum foil that is sprayed with some non-stick cooking spray. Put the diced potatoes into a medium-sized bowl and coat with olive oil. Gently toss the potatoes until they are completely covered in oil. In a small bowl, mix together the Parmesan cheese, paprika, garlic powder, salt and pepper. Sprinkle this mixture overtop the potatoes and then toss the potatoes again with a spoon to cover the potatoes with the spices. Put the potatoes onto the baking pan and bake for approximately 35 to 45 minutes, stirring every so often so that they are evenly cooked. When finished baking the potatoes, remove them from oven and sprinkle with additional salt and pepper if desired.
